The result was a high-protein burger with improved nutritional value, while maintaining juiciness, flavour and texture. Compared with a standard uncooked beef burger, the hybrid formulation showed a reduction in fat and an increase in protein content.

LP80 was selected for this application because of its colour, high protein content and strong functionality, making it particularly suitable for firmer textures such as burgers.

 

Application Example: Hybrid Turkey Nuggets

For white meat applications, Fava Bean Protein 85% offers a strong fit due to its light colour, neutral flavour and smooth emulsion texture.

In Atura’s hybrid turkey nugget concept, FP85 was used to support binding and nutritional improvement without negatively affecting the taste or texture of the finished product. The formulation achieved a higher protein content and improved nutritional scoring, while maintaining a familiar nugget appearance and eating experience.

This makes FP85 well suited to poultry and pork-based hybrid products where colour, flavour and texture are especially important.

 

Application Example: Sausage Roll Filling

Atura FP85 was also used in a sausage roll filling, where it helped create a soft, hydrated protein gel that blended effectively with sausage meat.

This supported a softer bite and improved nutritional profile, including increased protein content and reduced fat and saturated fat. The smooth texture and neutral flavour of FP85 made it well suited to this type of application, although LP80 may also be suitable where stronger gelling is required.
